Orange Vinaigrette

Orange Vinaigrette

Diced ripe mango
1/3 cup grated carrot
1 Tbsp ginger
1/3 cup canola oil
1 Tbsp sesame oil
2 Tbsp white vinegar
1/4 cup honey
Pinch of salt

This syrupy dressing, drizzled over cherry tomatoes; Boston and green leaf lettuce; cucumbers; and green and red onions; brings a sweet rainbow to Winter.
