On 7 Nov, I ate.

Breakfast:
Coffee with Splenda
Petite Quiche-cakes

Snack:
Strawberry-banana yogurt (contains modified corn starch) with ½ banana

Lunch:
2 Quiche-cakes

Snack:
Date & coconut rolls*

Dinner:
Stuffed pepper

Snack:
Pecans

After-dinner:
Peppermint tea

*3 - cut in thirds with an almond pressed into each

Stuffed Peppers

Ingredients:
4 Bell peppers
Olive oil
Red onion
Garlic
1+ lb. Ground beef
Grape tomatoes
Colby and/or jack cheese, shredded

Method:
Heat oven to 350°
Slice out pepper stems and empty of seeds
Slice tomatoes; Grate cheese; Chop onions; Mince garlic
Heat burner and drip some olive oil in skillet
Soften onions and warm garlic in skillet
Set onions and garlic aside in stuffing bowl
Brown beef in skillet; season as you like
Drain beef and add to stuffing bowl
Combine beef, onions and garlic
Pack pepper with stuffing
Top stuffed peppers with sliced tomatoes and cheese
Coat bottom of 8x8” baking dish with olive oil
Place peppers in dish, add remaining stuffing and tomatoes
Bake for 45 minutes

If you have to BYOV[ials] to a Diagnostic/Lab Patient Service Center, you'd probably do best to drop them off at least one day before. I showed up, raring to roll (my sleeve), but the slow shake of the phlebotomist's head as she sized up my bag of boxes said it all ... I would simply have to come back after she'd had time to study the order.

That information would have been more timely had it been delivered the second I walked in the door; rather than a half hour into the Kindly Ol'Chatterbox & Snuffles McWheezy Waiting Room Variety Show.

Update 6 Nov: The vials in the box did not match the tests indicated on the requisition. No response from Prometheus.

Update 7 Nov: The Lab know knows what to draw and how, but I have to fast and come in at 7am tomorrow.

Petite Quiche-cakes

Petite Quiche-cakes

Ingredients:
10 eggs for a dozen mini-quiches
½ cup shredded cheese
½ cup chopped broccoli florets
½ lb. bacon
¼ chopped onion
½ Tbsp. thyme

Method:
Heat oven to 375°
Fry bacon in skillet; set aside to drain, then chop
Pour off most bacon grease, then soften onions in skillet
Grease cupcake pan with olive oil or bacon grease
Beat eggs in a large measuring cup
Incorporate cheese, broccoli, bacon and onion with eggs
Season with thyme, garlic powder, salt and pepper (if you like)
Fill each cup about ¾ way (siphon and even out with spoon)
Cook for 20-25 minutes
Needn’t cool for long! – scoop out of the pan with a spatula
